Abstract

EFFECTS OF STORAGE ON AUTO-OXIDATION LEVELS OF SELECTED ALCOHOLIC AND NON ALCOHOLIC BEVERAGES IN NSUKKA TOWN, ENUGU STATE OF NIGERIA

ABSTRACT

This work is aimed at determining the effects of storage on lipid peroxidation using MDA levels as an indicator. Five samples of alcoholic and non alcoholic beverages were used in this study. These include beer 1, beer 2, Juice 1, Yoghurt 1 and Yoghurt 2. Their MDA levels were taken immediately at zero hour before placing at different storage devices (bench, refrigerator and freezer) and at different time intervals (one hour, two hours, and over night). When the MDA levels of the samples measured at zero hour were compared with the MDA levels of samples measured at different time intervals in the different storage devices, some showed significant increases/decreases in MDA (P< 0.05), while some showed no significant increases/decreases in MDA (P > 0.05). These findings indicate that storage have adverse effect on MDA levels of these selected alcoholic and non alcoholic beverages.
