PROPERTIES OF ALPHA-AMYLASES & ITS INDUSTRIAL IMPORTANCE

. Abstract This review is an overview to study about the microbial amylase and its various industrial utilization. Amylases have the demand in various industries as well as in food, textile, paper, pharmaceutical industries. Enzymes can be taken as good substitute over chemical catalysts based on the growing environmental concerns. Amylases are the starch hydrolysing enzymes broken down to form starch to dextrin and then to smaller polymers composed of glucose units. Alpha-amylase derived from several microorganisms specially from fungal and bacterial sources have huge application in fermentation, food & in pharmaceutical industry. The properties of alpha-amylases such as pH profile & stability, thermostability are important in the development of fermentation process. Keywords: Enzymes, starch, fermentation, amylases.
