AYURVEDIC PRINCIPLES OF DIET AND FOOD TECHNOLOGY

Abstract

The human body need food to provide energy for all of its processes, including growth, maintenance, and repair. A balanced diet consists of a variety of foods in proportions and levels that are appropriate for the body. Both physical and mental health depend on consuming a balanced diet and maintaining a healthy weight. Ayurveda views nutrition as a vital aspect of life since, it is one of the Tri-Upastambha, or "three pillars of life." Supported by these three elements, the body gains strength, Complexion and growth, and this process continues throughout life, so as long as a person refrains from engaging in unhealthy habits. In Ayurveda, the five fundamental elements known as the PanchaMahabhootas— Prithvi (Earth), Aap (Water), Teja (Fire), Vayu (Air), and Akasha (Ether)—make up all matter in the universe. Pancha Mahabhootas also comprise the Tridoshas (Biological Humors) comprised of Vata, Pitta, and Kapha, which make up the body. Every food item has an effect on the human body that either balances or calms the Dosha. To maintain the Dosha (health) homeostasis, Ayurveda has advocated for a certain diet. Planning ahead and enjoying our food might help us keep our bodies healthy.
